Reckon there’s no better place to start than the beginning with Gundam 79. If you can tolerate the outdated animation. Wing has also been a go to for me but that’s my childhood bias chiming in. There’s the universal century consisting of Gundam 79, then Zeta, and Double Zeta. Those three are tied together. The rest are spinoffs if I’m remembering right so they’re perfect to watch as-is.

Best place to get into the original story is 0080: War In The Pocket
It's self-contained, two hours long, and all you really need to know is that giant robots are the new thing in the earth vs colony war.

The original setting (Universal Century) is Mobile Suit Gundam, Zeta Gundam, ZZ Gundam, Char's Counter Attack, Unicorn

These need to go in order but there are some side stories that can basically watch whenever and in any order. These are 0080, 08th MS Team, Igloo, and 0083.

All the other series are self-contained and go in any order with the exception of the 00 Movie going after the series and Endless Waltz going after Wing.

My personal recommendation is Gundam 00.

Out of all the newer stuff I’d say iron blooded orphans is the best. 83 is my favourite though, that animation....
